Registration comes first
A food business must be registered with the appropriate authority before trading. This is administrative rather than difficult, and it is the foundation everything else sits on. If you are taking over an existing premises, do not assume registration transfers automatically.
HACCP is a system, not a folder
A HACCP-based system means identifying where food safety hazards can occur in your specific operation, deciding the controls, and monitoring them. A generic folder bought online and never opened is the most common failure, because it does not describe your kitchen and the records will not match your practice.

Records are what get inspected
Temperature logs, cleaning schedules, delivery checks, training records. Inspectors look at whether these are current and whether they are plausible. Records completed in one handwriting on the morning of an inspection are recognisable and worse than gaps, because they suggest the system is not real.
Training appropriate to the role
Staff must be trained or supervised appropriately for what they do. Keep the certificates and the internal training records together, because it is one of the first things asked for and one of the most commonly scattered.
